Why should you choose an enameled cast-iron plancha - French griddle?
Cast iron has well-known qualities that ensure even cooking across the entire surface of the plate, and the inertia of the heat is ideal for cooking. The enamel prevents cast iron from becoming porous and oxidizing. This makes cooking and maintenance easier and more efficient.
How to install your plancha - French griddle.
You can choose to install your plancha - French griddle on a cart, on a cart table or on a stable horizontal support covered with a non-flammable material.
We recommend using a 6 kg tank of butane or propane gas with the appropriate regulator. Keep the gas tank as far away as possible from any source of heat by placing it on the bottom shelf of your cart or cart table, on the floor, beside or behind your plancha - French griddle.
Make sure the control knobs are in the off position.
The plancha - French griddle connection is located at the rear or side of the appliance. Connect your plancha - French griddle to the gas tank with a flexible NF Butane/Propane hose:
Check that the flexible hose is in good condition, and replace it if is cracked or damaged.
After connecting the hose to the appliance, connect the regulator to the hose and to the gas tank, following the instructions supplied with the regulator and hose.
Make sure the control knobs are in the off position.

- or XP D36-112 flexible hose with a 10-year service life

How to light your gas plancha - French griddle.
After connecting the plancha - French griddle to the gas tank, open the gas tank by turning the regulator valve, then press the safety reset button.
Turn the control knob on your plancha - French griddle 180 degrees counter-clockwise, hold it down in the low position (low flame) and press the piezo: you will hear a clicking sound and the piezo spark will ignite the burner.
For models with thermocouple protection, press and hold the control knob for another 5-10 seconds to activate the thermocouple protection.
When first used, it is necessary to press the piezo several times so that the gas reaches the griddle burner.
Slowly turn the knob to adjust the flame height. This is the same flame control system as used on a gas stove. Visually check burner ignition through the openings in the appliance.
Repeat the same procedure for each burner.
Then adjust the flame height as needed by turning the knob(s) from full flow (large circle) to reduced flow (small circle).

Set the temperature by turning the thermostat knob(s). The heater will start up and the indicator(s) will light up.
When the cooking surface reaches the desired temperature, the indicator light will switch off automatically. The light comes back on when the cast-iron plate temperature is lower than the thermostat setting. The plate will then heat up again.
The appliance will keep switching on and off in order to maintain the desired temperature.
You can set the temperature from 0°C to 300°C.

Which type of gas should you choose?
LE MARQUIER planchas - French griddles can be used with either propane or butane, provided that the regulator is adapted to the type of gas you wish to use. Our planchas - French griddles are not designed to be used with the natural gas supplied by your utility company, so do not use it.
If you like to use your plancha - French griddle even in winter, we recommend using a propane tank. In fact, only propane can be used in sub-zero temperatures and must be stored outdoors. So, your choice will depend on how you use your plancha - French griddle and where you want to store your gas tank.

Can I close the lid of my plancha - French griddle when cooking?
LE MARQUIER lids are protective lids. Under no circumstances should they be used for cooking. To cover certain foods while cooking, we recommend using our griddle basting dome.
What's the difference between a cart and a cart table?
A cart table has a solid surface that can be used as a work surface. Your plancha - French griddle will be placed on a solid surface.

Turn down the heat on your cooking plate, pour on water and scrape with the stainless steel spatula. That's all you need to do!
How to clean your plancha - French griddle after you have finished cooking.
Thanks to the enameled cast-iron plate, LE MARQUIER planchas - French griddles are very easy to clean. When your plate is still hot, use clean water, Griddle Spatula Stainless Steel, 2 Stainless Steel Scrubbers with Handle and Griddle Super Cleaner/Degreaser Spray - 750 ml. Then follow the instruction diagram. Contrary to popular belief, you should never use ice cubes. The thermal shock could damage the enamel on your plate.
My enameled cast-iron plate is chipped. What should I do?
Our enameled cast-iron plates are handcrafted. They feature a cast-iron core covered with two layers of enamel.
In some cases, thermal shock between the cast iron and the first enamel layer can weaken the second enamel layer. Small craters, known as scaling, can form on the plate.
This scaling, or chipping, does not affect the quality of your plate, so you can continue to cook on your plate.

A large yellow flame is coming out of the burners on my plancha - French griddle. What should I do?
An insect has probably made a nest in the burner, preventing the gas from flowing normally.
Use a powerful blower to clear out all the burners, gas outlet holes and the gas inlet.
When you light your plancha - French griddle again, the detached nest should burn away and no longer be a problem.

Check that your plancha - French griddle is properly connected to the gas tank and that the gas supply is open.
Make sure the gas tank is not empty.

Charcoal Grill / Rotisserie
How to set up your charcoal grill.
To set up your charcoal grill correctly, place it on a suitable cart or on a stable, heat-resistant horizontal surface (e.g. firebrick).
Leave a 10 cm gap between the back of the charcoal grill and the wall it is installed next to, so that there is sufficient air circulation to prevent warping.
If your charcoal grill is placed directly on the counter top, it must always be raised by at least 3 cm to prevent the ash drawer from warping due to poor air circulation under the grill.

If your charcoal grill is built-in, the maximum thickness of the counter top into which the charcoal grill can be installed, without blocking the ash drawer, is 6.5 cm.
How do I use my charcoal grill?

Depending on how you intend to use it, fill either the vertical or horizontal firebox of your charcoal grill.
Place a layer of charcoal in the bottom of the ash pan.
Place a few solid fire-starters (commonly sold in stores) on top.
Spread another layer of charcoal to fill up the firebox to 3/4 of its capacity.
Light the fire-starters with a match. The charcoal grill must be heated and the fuel kept glowing for 30 minutes before beginning to cook. You can start cooking when there is a layer of ash covering the fuel.

Can I use both fireboxes at the same time?
Do not light both fireboxes at the same time (except when using the Méchoui model). Use the horizontal firebox for grilling on the grill and the vertical firebox for roasting on the rotisserie.
How do I operate my rotisserie?
Position the legs of your rotisserie so that the spindle supports are facing you.
Install the motor by placing the bracket in the holes provided on the motor platform.
Place a piece of meat on the skewer. Tighten all the butterfly clamps to hold the meat in place.
Push the skewer into the motor and tighten the butterfly screws.
Remove the skewer from the left-hand bracket.
To ensure correct operation, tighten all the butterfly screws (incorporated in the barbecue skewers, centrifugal weights and motor end cap).

Adjust the leg spacing and height.
If your rotisserie is equipped with weights, these weights need to be balanced. The four weights are used to counterbalance any imbalance in the pieces to be roasted; they can be adjusted using the butterfly clamps on each weight.
Connect your motor to the electrical power supply and start the motor.
Which fuel should I choose for my charcoal grill?
To avoid damaging your LE MARQUIER charcoal grill, we recommend using charcoal as the only fuel.
Avoid using wood, pine cones and vine shoots, as they could damage your appliance. Do not use liquid or gel fire-starters. They could leak into the ash drawer.

If you have chosen a steel model, we recommend storing it under a cover in the winter. If you've chosen a stainless steel model, you can leave it outside all year round. In all cases, we recommend covering your device with a cover.
